Vegetable balti curry fast diet

Another fast day, another Fast Day dinner. Tonight’s was such a success that the non-dieting Mr Q enjoyed it (without realising it was a ‘diet’ meal) too.

Vegetable balti curry

1 red pepper, chopped into chunks
1 brown onion, sliced
1 large courgette, sliced
1 handful baby peas
6 small boiled new potatoes, cut into bite-sized pieces
200g (1/2 jar) Patak’s Balti curry sauce

Add onion, pepper and courgette to a large frying pan and cook until soft.
Add curry sauce, potatoes and peas, and cook for a further 10 minutes.
Serve on rice or shirataki noodles.

With only 101 calories per serving, Patak’s Balti Curry Sauce is the perfect base for whatever vegetables you have to hand. I calculated that with the addition of the vegetables I’d chosen – potatoes, courgette, pepper and onion – the entire dish came to 245 calories. With a half-serve of rice (1/4 cup cooked basmati rice), this is a 300 calorie dinner, and a very satisfying one at that!
