Guests are arriving soon (in this case, my parents – all the way from Australia!), so my fridge is full of yummy snacks and easy-to-prepare nibbles to enjoy over a glass of wine.
I love whipping up this really easy smoked mackerel pâté when I know we’ve got visitors arriving, it’s great scooped up with celery sticks, water crackers, or toasted sourdough bread. And it’s so simple!
Smoked mackerel pâté
150g hot smoked mackerel split fillets (I get mine from Waitrose)
200g of fromage frais
juice of one small lemon
2 tsp horseradish
chopped spring onion
good slug of olive oil
salt & pepper to tasteFlake the mackerel into a bowl, tip in the fromage frais, squeeze in the lemon juice, stir in the horseradish, toss in the chopped spring onion, and taste. Add salt and pepper to taste and finish with the olive oil. Enjoy!

Yum, yes, it’s addictive. I made it last Sat. I often make it for a party snack or simple lunch.
